Go ahead and paste one of your tried and true dinner recipes in the comments below. The only requirement is that it be a healthy one! (If you can't find one, that's ok, too!) Let's see if we can share enough recipes with each other on this particular post to have us set for the rest of February! I'll add them to this post when I get enough!
To start us off, I'll offer two recipes. One quick breakfast-for-dinner idea, and one not-so-quick, not very healthy, but reallly delicious dinner recipe.
Scarce Eggs
- 6 eggs
- 2 cups milk
- 1/4 cup sugar
- 2 cups flour
- 1 tsp. salt
- 2 T. oil
Put eggs, milk, sugar, and salt in blender. Blend well. Add flour. Blend. Add oil and bake on hot griddle. (Batter will be thin.) This serves about 4 adults.
I got this recipe from a site called myinnerchef.com. I tried it and absolutely love it! It's a cross between pancakes and crepes, but more eggs; thus more protein. You can serve it with fruit, yogurt, peanut butter, syrup, or anything else you normally put on crepes or pancakes. I love it because it's super easy, quick, and I always have the ingredients on hand!
Chiang Mai Curry Noodle Soup
I got this recipe from cooking.com, but I have simplified it and added ginger.
- Peanut or corn oil (I used vegetable oil)
- 1 lb. thin/regular Chinese egg noodles
- 3 cloves garlic, finely chopped
- 2 Tbs +/- freshly grated ginger
- 2 cans coconut milk, unashaken
- 2 Tbs. red curry paste, or to taste
- 1 1/2 tsp. curry powder
- 1/2 tsp. ground turmeric
- 1 grated carrot
- 3/4 lb. chopped chicken meat
- 4 cups chicken stock
- 3 Tbs Thai fish sauce (I used regular fish sauce, and it tasted fine)
- 1 tsp palm sugar or brown sugar
- 1/4 cup shredded green cabbage
- Juice of 1 lemon (I just used about a Tbs of lemon juice and it worked fine)

Garnishes:
Fresh cilantro, chopped
2 green onions, sliced
Directions:
Boil noodles following the directions on package. Set aside.
Measure out 2 tablespoons of oil and place in a large saucepan over medium heat. Add the garlic and sauté until browned, about 1 minute. Do not shake the cans of coconut milk before opening. There should be a thick layer of cream on top of each. Spoon off 1/2 cup of the thick cream from the top of each can and add it to the garlic. Raise the heat to medium-high and cook, stirring frequently, until the cream boils gently. Add the red curry paste, curry powder and turmeric and stir until smooth. Reduce the heat to medium and simmer until the mixture is thick and the oil begins to separate around the edges and rises to the surface, about 5 minutes.
Add the chicken, breaking it up into small pieces. (I actually just cooked my chicken beforehand in my crockpot, and then shredded it for the soup.) Cook until the chicken becomes white, about 2 minutes. Raise the heat to high. Add the remaining coconut milk, the chicken stock, fish sauce, palm or brown sugar and cabbage and stir well. When the mixture begins to boil, adjust the heat to maintain a gentle boil and continue cooking for 8 minutes longer.
Add lemon juice and cooked noodles. Garnish with the cilantro and green onions.

ReplyDeleteI will share some real recipes at some point, but first I have to tell you to start trying more stir-frys! We buy a box of veggies each week from a local farm. While they tell me in advance what's available, it's been an adventure learning to cook with things I wouldn't normally buy. One thing I've relied on is stir-fry. I buy premade sauces to start (like Hoisin or Garlic Bean Paste) and then spiff them up with soy sauce, fresh grated ginger, garlic, and maybe some orange juice (or other juice - I tried cranberry last time!).
So, first I cook our rice or quinoa, then I start sauteing veggies. Finally, I mix up the sauce and warm it up. And sometimes I have meat leftovers that I throw in, too. I started by following a recipe for Orange-Hoisin Chicken, but have tweaked it numerous times. One thing I've learned is to reduce the sweetener it calls for. Every time I use the called for amount it is too sweet for our tastes. Which only makes it healthier, right?

ReplyDeleteTabouli with Quinoa instead of Bulgar Wheat. You could also use brown rice.
Ingredients
* 2 cups water
* 1 cup quinoa
* 1 pinch salt
* 1/4 cup olive oil
* 1/2 teaspoon sea salt
* 1/4 cup lemon juice
* 3 tomatoes, diced
* 1 cucumber, diced
* 2 bunches green onions, diced
* 2 carrots, grated (optional)
* 1 cup fresh cilantro, chopped
Directions
1. In a saucepan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
2. Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley. Stir in cooled quinoa.
Yields 4 servings
This is a go-to summer dish served with cottage cheese, pita bread, and maybe some hummus!
There is nothing better than cutting up some zucchini, yellow crook neck, onions, and garlic. Sauté for a few minutes and add some coarsely cut tomatoes and sprinkle with Parmesan cheese and salt and pepper. Good stuff. You can also add peppers or any other vegetable you want..
ReplyDelete5 Ingredient Sauteed Chicken and Broccoli Rabe with Black Olives, Sundried Tomatoes and Feta Recipe
ReplyDelete1 cup diced oil-packed sun-dried tomatoes, plus 1 tablespoon oil from jar
1 pound boneless skinless chicken breast halves, cut into 2-inch pieces
1 bunch broccoli rabe, chopped
1/2 cup sliced pitted black olives
1/4 cup water
Salt
Freshly ground black pepper
1/3 cup crumbled feta cheese
Heat the oil from sun-dried tomatoes in a large skillet over medium-high heat. Add chicken and cook 3 to 5 minutes, until golden brown on all sides. Add tomatoes, broccoli rabe, olives, and 1/4 cup water, season with salt and pepper, cover and cook 3 minutes, until broccoli rabe wilts and chicken is cooked through. Remove from heat, transfer to a serving plate and top with feta cheese. Usually served with capellini pasta or rice.

Ingredients
1 tablespoon vegetable oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium onion, thinly sliced
1 clove garlic, peeled and chopped
2 teaspoons hot curry powder (i only use 1 teaspoon but i am a whimp when it comes to spice)
1 can (10-3/4 ounces) reduced-fat, low-sodium condensed cream of chicken soup (such as Campbell's Healthy Request)
1-1/3 cups skim milk
1 medium tomato, seeds squeezed out and chopped
1 mango, peeled, pitted and thinly sliced
1/4 cup dark raisins
1 cup couscous prepared with 1 cup chicken broth
Directions
1. Add oil to a large pot and heat over medium-high heat. Season chicken with 1/4 teaspoon salt and the black pepper. Add to pot and cook for 7 minutes. Remove to a plate.
2. Add onion and garlic and cook, stirring, 5 minutes, until lightly browned. Add the curry and cook for 1 minute. In a medium-size bowl, whisk together the condensed soup and milk, and stir into pot.
3. Add remaining 1/4 teaspoon salt, tomato, mango, raisins, chicken and any juices from plate to the pot. Bring to a boil. Lower heat and simmer with the lid slightly ajar for 25 minutes, stirring occasionally. Serve with cooked couscous.
